Cold Weather Recipes

It’s cold outside and now would be a good time to have a nice warm treat.  Maybe a slice of warm homemade bread or a cup of tea and a handful of quick no bake cookies.  The first recipe is my Grandma Lawson’s Cottage Cheese Bread.  And no, it doesn’t taste like cottage cheese. Another bonus is no kneading. The second recipe is Jane Hardy’s No Bake Cookies.  Jane was attending OBC at the same time I was there, and thoughtfully shared this recipe.

GRANDMA LAWSON’S COTTAGE CHEESE BREAD

Soften 1 cake yeast in 1/4 cup warm water and 2 tbsp sugar.  Set aside

  • 1 c creamed cottage cheese
  • 1 tbsp baking soda
  • 1/2 tsp salt
  • 1 egg

Mix the above ingredients and beat.  Add the yeast mixture.

Add 2 1/4 – 2 1/2 cups flour to form a stiff dough.  Beat well.  Cover and let rise until double in size.  Stir down and put in greased pan.  Let rise until light.  Bake at 350F for 40 to 50 minutes or until brown.

JANE HARDY’S NO BAKE COOKIES

  • 1/2 c brown sugar
  • 1/2 c white syrup
  • 1 c peanut butter
  • 2 c corn flakes

Heat the sugar and syrup until it comes to a boil.  Stir in peanut butter.  Add the cereal.  Spoon out on wax paper or foil.

Okay, I’ve convinced myself to go in, put on the kettle and whip up some of Jane’s cookies.  And yes, I’ve had my peanut butter long enough to know that it’s safe.  It’s already half gone and no one has ended up sick after eating it.
