Diet Chili

One of my comfort foods when it gets cold is chili.  I can’t make chili just for a couple people.  No matter what I do, I always end up with a huge kettle full by the time I quit adding ingredients.  But that’s okay.  Chili is always better the second day and it freezes well. It starts small and just expands to fill the space – a bit like wire coat hangers.  Since it’s so very easy to add pounds during the holiday season, I thought I would share this recipe.  I know one deep breath at a holiday buffet dessert table and instantly five pounds jumps onto each hip.  Even if you are one of those people with great metabolism who can eat anything and not gain, make this chili just because it’s good.  This recipe was given to me by a dear lady, Doris Wilding.  Doris was a member of a small country church where I spent many happy hours.

DIET CHILI

  • 6 cups water
  • 2 beef bouillon cubes
  • 1 3/4 lb ground round
  • 1/2 cup chopped onion
  • 1/2 cup diced green pepper (bell pepper)
  • 4 cups diced celery
  • 1 1/2 cup tomato juice
  • 1 1/2 tsp salt
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tbsp oregano
  • 2 cloves garlic, minced
  • 2 cans French style green beans

Bring water, bouillon cubes and ground round to a boil.  Simmer 15 minutes.  Remove from heat and chill well so that you can skim off the fat.  Then add all the other ingredients except the green beans and simmer for 1 hour.  Just before serving, add the green beans and heat thoroughly.

    hey nancy just poped in and saw your dish on chili in the past iam not much of a chili eatter becouse i have a hard time with tomatoes and sause but your diet chili sounds real good i think i will try it i can eat a little sause but not to much you see i have reflux real bad and tomatoe sause sometimes flairs it up. but your chili is made with tomato juice and i can drink tomato juice so i should be able to eat the chili made with it i am going ti try it and i will let you know how i do with it thank you for your lite dish iam always looking for something good to eat thats not to havey or fatting and i look forward to more tasty ideas on your page. always your sister TY.

    Hi, Ty. I’m always glad to have you pop in for a visit. I keep looking for the lighter recipes, too. I can no longer eat some of the things I enjoy and tomato sauce is on that list. ;-D
