Saturday Sewing Snacks

Now that it’s getting cooler, my mind is turning to baking.  Even here on the island it got down into the sixties during the night, and the day is pleasant at 73F.  The first recipe is for apple bread and was given to me by Jerry Kackley, one of the ER unit secretaries.  Thank you, Jerry.

APPLE BREAD

  • 1 c salad oil
  • 3 c flour
  • 2 c sugar
  • 1 tsp salt
  • 3 eggs
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 1 c chopped nuts
  • 2 c diced apples

Pour into ungreased angel food pan.  Bake in 350F oven for about 90 minutes (or more).  I found that 1 hour, 10 minutes worked best for me.

The next recipe is from one of those church cookbooks we seemed to all be buying back in the day.  I don’t even have the cookbook any more.  I just have a few recipes that I cut out and this is one.  It was contributed by Juanita Domeyer.

APPLESAUCE NUT BREAD

  • 2 c sifted flour
  • 3/4 c sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 beaten egg
  • 1 c applesauce
  • 2 tbsp melted shortening
  • 1 c chopped nuts

Sift dry ingredients in bowl.  Combine remaining ingredients and mix with dry ingredients.  Place in greased loaf pan.  Bake 1 hour at 350F.

This is a yummy way to use up some of the apples that are in season right now.
